Pizza Cheese Selection and Blending (Aurelio’s Clone)

A short tip on formulating cheese blends for pizza. This is a much overlooked part of the pizza making process. Go away mozzarella! Bring on the better pizza cheeses such as scamorza, fontina, romano, and parmesan. I designed this blend to mimic the pizza cheese from my favorite thin crust pizza joint: Aurelio’s.
