Spinach Calabrese (Aurelio’s Clone)

Essentially a spinach and garlic calzone cooked on an outdoor grill (a Kamado Joe Big Joe), this is my homemade version of one of my favorite dishes from my favorite pizzeria, Aurelio’s. I spent years trying to perfect this ‘clone’ of Aurelio’s Spinach Calabrese using fresh spinach, garlic, salt, oregano, basil, homemade roasted tomatoes, homemade pizza dough, and a special four cheese blend of parmesan, romano, scamorza, and fontina. It is AWESOME!!

  1. So….. what’s the aurillos blend? I am doing pizza this weekend and love aurillos. Would love to know the cheese blend.

    1. It’s basically what I mention in the Pizza Cheese Selection and Blending video linked above. It’s roughly 50/50 hard and soft cheese. For example, Scamorza and Peccorino Romano, or Fontina and Parmesan. You want the cheese to not be stringy but instead simply separate from the slice with a slight crunch with every bite.
