A twist on a staple of Chicago cuisine, the Italian Beef Sandwich, cooked on an outdoor grill (my Kamado Joe ceramic cooker). Uses chuck roast instead of the typical top round. This is especially useful if you do not have a slicer at home since chuck roast falls apart without the need for a slicer.
Here’s a list of ingredients: 2.5-3 lb chuck roast, 2 cups onion (~1 medium), chopped, 1 cup anaheim peppers (or other zesty peppers), chopped, 1/2 cup garlic, chopped, 1/4 cup fresh thyme, chopped, 1 Tbsp fresh rosemary, chopped, 2 tsp black pepper, 1 tsp dry oregano, 3 cups beef broth, fontina cheese, shredded, beef rolls (Turano or Gonnella brand preferred).
